I'm participating in Theresa's (The Musing's of A Mom's )Recipe Swap again this week. I love Bobby Flay and this recipe of his. It is a little time consuming so make sure you have time to prepare the ingredients in advance. It is so worth the time and effort! If nothing else just making the relish and/or Avocado Mayo to have on hand is yummy!
Grilled Turkey Burgers with Monterey Jack, Poblano Pickle Relish and Avocado Mayonnaise by Bobby Flay Poblano Pickle Relish 2 poblano chiles, grilled, peeled, seeded and finely chopped 1 large or 2 medium dill pickles, finely chopped 1 small red onion, finely chopped ¼ cup fresh lime juice 1 tsp honey ¼ tsp salt 2 Tbs finely chopped fresh cilantro leaves ¼ tsp freshly ground black pepper. Combine all ingredients in a medium bowl. Cover and let sit at room temp for at least 30 minutes and up to 4 hours before serving. Avocado Mayonnaise ½ ripe Hass avocado, peeled and chopped ¼ C mayonnaise (I’ve used the lite and it’s good too.) 1 Tbs fresh lime juice 2 Cloves garlic, minced ½ tsp ground cumin ¼ tsp kosher salt ¼ tsp freshly ground black pepper Place all ingredients in a food processor and mix til smooth. I’ve mashed it together til it spreads and it’s yummy. Turkey Burgers 1 ½ LBS ground turkey, 99% lean 2 Tbs canola oil ½ tsp kosher salt ½ tsp freshly ground black pepper 4 slices of Monterey Jack cheese, ½ ounce each Make into 4 patties 1 1/2 inches thick. Brush each burger on both sides with the oil and season with the salt and pepper. Grill until slightly charred on both sides and cooked completely through (about 4 min. per side.) Place a slice of cheese on each burger, close the lid of the grill, and wait 1 more minute to melt the cheese. Transfer to a cutting board and let rest for 5 minutes. Top each burger with 1 Tbs of avocado mayo and a few TBS of the relish. Serve the remaining mayo and relish on the side if desired.

That avocado mayo sounds a lot like guacamole, which wouldn't be a bad thing!
